Inspired by the iconic Aussie treat, this overnight oats recipe layers a soft vanilla base with rich chocolate and a sprinkle of coconut. Made with Vitable Plant Protein for a satisfying and nostalgic twist on breakfast or anytime fuel.

Ingredients

1 cup rolled oats

¼ cup Vitable Plant Protein

½ cup Greek yoghurt

â…” cup unsweetened almond milk

2 tsp maple syrup

½ tsp vanilla extract
-
10 g dark chocolate (70%), melted

2 tbsp shredded coconut (plus extra for topping)

Fresh raspberries, to serve
Directions
In a bowl, mix the oats, Vitable Plant Protein, Greek yoghurt, almond milk, maple syrup, vanilla extract and shredded coconut until smooth and creamy.
Divide evenly between two jars or containers.
- Melt the dark chocolate and pour over each jar. Sprinkle with a little extra coconut and refrigerate overnight. Serve with extra raspberries if desired.
