This big-batch Tuscan Chicken Orzo makes 4 protein-loaded meal prep bowls, each delivering 50g protein and serious flavour. Its cost efficient, easy and it reheats like a dream.
Ingredients

60g spinach

540g raw chicken breast, diced

2 tsp chicken stock powder

1 tsp paprika

56g sundried tomato, finely diced

260g raw risoni

800ml chicken bone broth

80ml thickened cream

72g parmesan cheese, shaved
Directions
Preheat the oven to 190°C. Place four oven-safe glass containers on a tray. Add the spinach, chicken, chicken stock powder, paprika, sundried tomatoes, orzo, bone broth and cream directly into each container. Stir inside each container so everything is mixed and the orzo is mostly submerged. Cover each container with foil. Bake for 20 minutes.
Remove the foil, stir each container, and check the liquid level. Add a splash of water or broth if needed. Sprinkle parmesan over each portion. Return to the oven uncovered for 10 minutes, until the orzo is tender, the chicken is fully cooked, and the top is lightly golden. Remove from the oven, let cool completely, then seal with lids.
