Rich, smooth and deeply chocolatey, these protein truffles are an elevated take on a classic festive treat. Made with Vitable Vanilla Plant Protein, nut butter and cocoa, they’re creamy, satisfying and perfect for mindful gifting or a nourishing after-dinner sweet.
Ingredients

½ cup (120 g) almond butter

3 tbsp honey or maple syrup

¼ cup (25 g) cocoa powder

⅓ cup (40 g) Vitable Vanilla Plant Protein

2 tbsp almond meal
-
Pinch sea salt
-
1–2 tbsp milk of choice

Coatings: melted dark chocolate, cocoa powder, finely chopped pistachios
Directions
- In a medium bowl, mix the almond butter, honey and milk until smooth.
Add the cocoa powder, Vitable Vanilla Plant Protein, almond meal and salt. Stir until a thick dough forms. Adjust with a little more milk if needed so it holds together.
- Roll the mixture into small truffles (about 20 g each).
- Coat each truffle as desired: dip in melted chocolate for an indulgent glossy shell, roll in cocoa for a classic finish, or press into crushed pistachios for a festive pop of colour.
Chill for at least 30 minutes before serving.
Recipe Note
Gifting & Storage: Keep refrigerated in an airtight container for up to 10 days. For mindful gifting, arrange truffles in reusable glass jars, separating layers with baking paper. Tie with natural twine or linen ribbon and add a simple handwritten tag for a thoughtful, sustainable finish.
