A festive twist on the classic, this high-protein rocky road combines rich dark chocolate with roasted nuts, Vitable Vanilla Plant Protein and bursts of tart, jewel-toned dehydrated berries. It’s colourful, nourishing and perfect for gifting - a treat that looks festive but feels balanced.

Ingredients

200 g dark chocolate (70 %), melted

60 g (¾ cup) Vitable Vanilla Plant Protein
- ⅔ cup (90 g) roasted almonds, chopped

¼ cup (30 g) pistachios
- ¼ cup (15 g) dehydrated raspberries, strawberries or mixed berries

Pinch sea salt
Directions
- Line a small square tin (about 20 cm) with baking paper.
Whisk the Vitable Vanilla Plant Protein in the melted chocolate until fully combined and glossy.
- Fold through the almonds, pistachios and dehydrated berries.
- Pour the mixture into the lined tin and smooth the top. Sprinkle over a few extra berries and nuts for colour.
Refrigerate for 1-2 hours, or until firm. Slice into squares.

Gifting & Storage: Keep refrigerated in an airtight container for up to two weeks. For mindful gifting, pack slices in compostable parchment-lined tins or boxes. Tie with natural twine or ribbon
