Melty, tangy, protein-loaded. This ultra-satisfying toastie brings creamy cottage cheese, turkey, brie and a pop of cranberry, all in a 50g protein sandwich.

Ingredients

100g cooked chicken or turkey, shredded

2 tbsp cottage cheese

50g brie, cubed

1 spring onion, finely sliced

A handful of spinach

1 tsp cranberry sauce

2 slices sourdough bread

½ tsp olive oil

Salt & pepper
Directions
In a bowl, mix the cottage cheese, brie, shredded chicken or turkey and spring onion. Season with salt & pepper.
Spread cranberry sauce over one slice of bread. Layer spinach on top, then spoon over the chicken or turkey mixture.
Close the sandwich and press gently so the filling sits evenly. Brush the top with olive oil and toast or air-fry for 3-5 minutes, or until the bread is golden and the brie is fully melted. Slice and serve hot.
