These matcha berry glow mochis are soft, chewy and creamy inside with bursts of fresh berries in every bite. Inspired by the viral rice paper mochi trend, this version uses creamy Greek yoghurt blended with Vitable Collagen Plus for a satisfying high-protein filling with subtle berry flavour and skin-supporting benefits. The vibrant green matcha dusting contrasts beautifully against the gorgeous pink filling created by the berry collagen and fresh berries, making them just as pretty as they are nourishing.

Ingredients

4 rice paper sheets

2 cups Greek yoghurt

1 tsp honey (optional)

1 cup fresh strawberries, diced small

Matcha powder, for dusting
Directions
In a bowl, mix Greek yoghurt, Vitable Collagen Plus and optional honey until smooth.
Fill a shallow tray or bowl with warm water. Quickly dip 1 rice paper sheet into the water for a few seconds until just pliable. Place the softened rice paper over a small glass or ramekin to help shape it. Spoon a small dollop of the yoghurt mixture into the centre, top with a layer of fresh berries, then cover with another spoonful of yoghurt mixture. Gently fold and press the edges together to seal into a smooth ball shape.
Place onto a lined tray and repeat with remaining rice paper sheets and filling. Freeze the assembled mochis for 30 minutes until lightly firm and chewy.
Lightly dust with matcha powder before serving.For the best texture, allow the mochis to sit at room temperature for 3-5 minutes before eating so the centre stays creamy and soft.
