Ingredients
-
¼ cup small sago/tapioca pearls
-
2 tbsp Vitable Plant Protein
-
1½ cups unsweetened coconut milk
-
½ cup strawberries, for blending
-
2 tbsp chia seeds
-
1-2 tsp maple syrup or honey
-
Pinch sea salt
-
1 cup mixed berries, to serve
-
1 cup ice cubes
Directions
Bring a medium pot of water to a boil. Add the sago pearls and stir immediately to prevent sticking. Cook for 10-12 minutes until mostly translucent, then turn off the heat, cover and rest for 5 minutes. Drain and rinse thoroughly under cold water until the pearls become glossy and separated.
Blend coconut milk, chia seeds, strawberries, Vitable Plant Protein, maple syrup or honey and sea salt until smooth.
Divide ice and chilled sago pearls between serving bowls or glasses. Pour over the milk mixture and top with mixed berries. Serve immediately while cold and refreshing.
