These no-bake gingerbread men are soft, spiced and perfectly sweet, made with Vitable Vanilla Plant Proteinfor a festive boost of nourishment. Easy to prep, they make a wholesome snack or gift that feels like Christmas in every bite.

Ingredients

½ cup (120 g) almond butter

2½ tbsp honey

1 cup (80g) oat flour

â…“ cup (40g) Vitable Vanilla Plant Protein

1 tsp ground ginger
-
¾ tsp cinnamon
-
Pinch nutmeg
-
Pinch sea salt
-
Dark chocolate, melted, for drizzling or dipping

Desiccated coconut, for sprinkling
Directions
In a medium bowl, stir together the oat flour, Vitable Vanilla Plant Protein, spices, salt, almond butter, honey, and coconut oil until smooth.
Mix until a firm dough forms. If the mixture feels too dry, add a dash of milk; if too sticky, add a little more oat flour.
- Roll the dough between two sheets of baking paper to about 1 cm thick. Using a small gingerbread man cutter, cut out shapes. Re-roll scraps and repeat.
Place the shaped gingerbread men on a lined tray and chill for 20–30 minutes, or until firm.
Dip or drizzle with melted dark chocolate, sprinkle with desiccated coconut, and return to the fridge until set.
Recipe Note
Gifting & Storage: For mindful gifting, wrap a few gingerbread men in compostable baking paper or pack in a box or cookie jar and tie with natural twine and a sprig of rosemary.
