These Lemon Cheesecake Balls are everything you love about a creamy lemon cheesecake in a nourishing, bite-sized snack. Made with cottage cheese, almond meal and chia seeds, they're packed with protein and fibre to help keep you satisfied throughout the day. Finished with a drizzle of white chocolate and a sprinkle of fresh lemon zest, they're the ideal for meal prep, afternoon snacks, or a healthier dessert.

Ingredients

250g cottage cheese

½ cup almond meal

¼ cup rolled oats

2 tbsp almond butter

1 tbsp chia seeds

1 tbsp fresh lemon juice

1 tsp vanilla extract

60g white chocolate

1 tsp coconut oil (optional)

Finely grated lemon zest, for sprinkling
Directions
Blend the cottage cheese in a food processor until completely smooth.Add the almond meal, oats, almond butter, chia seeds, lemon juice, vanilla extract, and sea salt. Blend until a thick dough forms.
Allow the mixture to rest for 5 minutes so the chia seeds can absorb some moisture. Roll the mixture into 10 evenly sized balls and place on a lined tray. Freeze for 15 minutes to firm up.
Melt the white chocolate (and coconut oil if using) until smooth. Dip the chilled balls in the melted chocolate. Immediately sprinkle with lemon zest. Refrigerate for 15-20 minutes, or until the chocolate has set.
Recipe Note
Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months. Allow frozen balls to soften for a few minutes before enjoying.
